French Vanilla Coffee Creamer

Ingredients

Base Ingredients:

  • 1/2 cup water

  • 4 tablespoons butter

  • 2/3 cup powdered milk

  • 2/3 cup sugar

  • 1 can coconut milk (13.5 oz)

Flavor:

  • 1 tablespoon vanilla

  • 1 vanilla bean

Directions

In a small saucepan melt the butter together with the water. Once melted, carefully pour them into a small bowl or blender. Add in the powdered milk, sugar, and vanilla. Scrape out the cavierof the vanilla bean and add that as well. If you do not have a vanilla bean, use an additional tablespoon of vanilla extract. Blend together until lightly frothy and the sugar has melted.  I personally love using my immersion blender for this, but a regular blender will work just as well.

Pour into a glass jar with a lid and store in the fridge. These last very well at least up to a week. I've always used mine up in about a week, so I'm not sure how much longer they would last after that.

To use, simply pour in your coffee (either hot or iced) as you would any normal creamer. The amount is up to you and your taste buds. :) It's a good idea to shake this up before using, though, since the coconut milk may want to separate a little bit. Nothing a quick shake can't fix.
